As I was doing some grocery shopping today, I thought of sending you these places in Park Slope...
Blue Apron Foods, while a tiny shop, has a good cheese and olive selection, and usually something sweet at the front counter to sample. I don't think they have a website, but here's some more info:

Union Market also has olives and pickles, as well as a cheese or two to sample. And on weekends, there's often a representative from some supplier offering samples near the cashiers.

Grab Specialty Foods will let you sample the tapped beers they have for sale, as well as the cheeses & meats behind the counter. They're not always spread out for the taking, so it may require you to ask.
